Long noodles are a symbol of prosperity and longevity in Chinese culture, known traditionally as biang biang noodles. You can find these “metre-long” beef noodles at an eatery called 西安印象, tucked away at People’s Park Complex.

Their beef noodles are not your usual finely pulled strands; rather, they’re much thicker and flat as well. Just check out the uber-long “noodle pull” on this bowl of beef noodles! You’ll definitely need to stand up in order to lift the entire strand of noodle out, and you probably might not want to slurp them up too hard as well.
