I have an unpopular opinion: I don’t like cheese. But wait, before you cry “Blasphemy!”, hear me out. I’m now a changed person, all thanks to Popeyes’ formidable new mac and cheese, served in a crispy waffle bowl with a side of cajun chicken and Mountain Dew – the Mac N’ Chickmas.
The Mac N’ Chickmas Set Meal ($8.90) comes without the blueberry biscuit.
Essentially 2 crowd-favourite comfort food combined into one – mac and cheese and chicken and waffles – the Mac N’ Chickmas is made with nacho cheese topped with breadcrumbs and parsley. The first bite was creamy, savoury, and rich without that sharp, yeasty aftertaste, and I suddenly had an epiphany – is this what I’ve been missing out on?
It helped that chilli powder was also cleverly added to the mix, making their recipe less cloying and more flavourful than the usual mac and cheese. As for the macaroni, there really is only 1 requirement, which is for it to be al dente, and it didn’t disappoint.
Don’t underestimate the unassuming waffle bowl either – slightly sweet with a hint of vanilla, pair it with a mouthful of mac and cheese while it’s still crispy for a party in your mouth! If you choose to eat it on its own after it softens, it tastes a great deal like the old-school pandan waffles that everyone loves, and is a nostalgic trip down memory lane.
Of course, it’s not Popeyes without their signature Cajun Fried Chicken, and as usual, it was crispy on the outside, juicy on the inside, and very well-seasoned all around. Understandably so too, since all their chickens are marinated for at least 12 hours before being hand-breaded and fried.

A hearty dessert perfect for those who aren’t a huge fan of sweet things, the dense buttermilk biscuits are topped with a generous dollop of tangy blueberry jam which has actual blueberry bits in it, and we all know how expensive blueberries can get.
