Mark your calendars, everybody! Menya Kokoro, one of Japan’s largest maze-soba restaurant chain, is finally opening its doors on our shore this coming Friday, 12th October! For those who aren’t sure what maze-soba is, “maze” means “to mix”; it’s essentially a dry ramen of sorts with oil, sauce, and a variety of other ingredients for you to mix with your noodles.

With 27 outlets opened worldwide since its establishment in 2013, Menya Kokoro is helmed by Chef Takuma Ishikawa, who not only trained under the original creator of the dish, but also boasts the highly-acclaimed Best 2014 Maze-Soba Award under his belt.

The restaurant will feature their best-selling signature Original Maze-Soba (Small – $10.80, Large – $12.80) and Spicy Maze-Soba (Small – $11.80, Large – $13.80) that are both made with Japanese-style slow-braised cha shu, ground saba fish, a secret house-made minced meat sauce, bamboo shoots, chopped garlic, poached eggs, and a generous amount of green onions, leek, and nori (seaweed).

On top of that, there’ll also be 2 Singapore-exclusive creations for diners to indulge in – the Maze-Don and Curry Maze-Don (Small – $13.80, Large – $15.80)! Both are made with 100% Japanese Michelin-acclaimed Tawaraya rice from Hokkaido and Niigata, which is only polished only upon order to preserve its aroma.
