Can’t get enough pizza in Singapore? We chanced upon a new Muslim-owned pizza joint along Arab Street that offers unique colourful pizzas, and they’re not made from regular dough—but sourdough instead!
It’s common enough to find sourdough bread in specialty bakeries all around Singapore, but it’s not often we find sourdough pizzas; so colour us intrigued when we saw that The Fluffy Chef serves sourdough pizzas, all made in-house. The sourdough pizzas are coloured with natural ingredients like beetroot, charcoal and spinach to give you pizzas in novel colours like pink, black and green.
Truffle Brisket Pizza, $28
One of their signature pizzas is the Truffle Brisket ($28) that comes in a black colour and is topped with a creamy beef brisket mushroom truffle sauce and jammy egg. The dough itself puffs up quite a bit in the oven; so you get a light, fluffy and slightly crisp pizza crust. As for the beef brisket mushroom truffle topping, we liked how saucy and unctuous it is, almost like eating a hearty bowl of homemade mushroom soup, but on a pizza. However, we would have liked it if the truffle aroma from the sauce were more pronounced to further elevate the richness of the pizza.
Formaggi Pizza, $24
Cheese lovers can try the vibrant pink-hued Formaggi ($24) that’s topped with 4 kinds of cheeses: mozzarella, parmesan, blue cheese and scamorza cheese. While the pretty pink colour from the beetroot was an interesting touch, the flavour itself is as you’d expect: simply cheesy—definitely a safe option for if you really like cheese.
If you’re concerned about the usual sour tang that you get with sourdough bread, you can rest assured that these pizzas aren’t sour in the slightest, and almost taste like regular pizza dough. As the pizza crusts are pretty thinly stretched out, it’s absolutely imperative that you dig into the pizzas while they’re still hot; preferably as soon as they’re served so you can enjoy the taste of the sourdough as it’s meant to be eaten. If you leave it to cool to room temperature, the crust will become quite crunchy and hard—not the best texture for a pizza.
Beetroot Spinach Ravioli, $21
Aside from pizzas, they also have homemade pastas like the Beetroot Spinach Ravioli ($21) that’s stuffed with spinach ricotta filling. This was a delight to eat, and each ravioli was sufficiently coated in the lemon sage sauce that was light yet buttery and rich at the same time, with a subtle tartness from the addition of cherry tomatoes.
Crispy Whitebait, $12
Fudgy Brownie with Ice Cream, $13
We ended with a Fudgy Brownie with Ice Cream ($13) that’s topped with a seasonal ice cream flavour courtesy of Momolato. The brownie itself is also homemade by their in-house pastry chef, and was warm and gooey inside. The portion is also really generous, perfect for sharing and a must order for sweet tooths. Other Italian items from the menu include mains and starters like Burrata Salad ($16), Porcini Risotto ($23), Beef Ragu ($23) and more; along with specialty mocktails, coffee and tea to drink.
The Fluffy Chef’s casual ambience makes for a great spot to catch-up with friends over hearty and homey Italian fare; and is worth hitting up if you’re looking for a unique pizza spot to try that’s a little different from the usual haunts.
