FORTUNA: POPULAR ITALIAN RESTAURANT FROM SYDNEY OPENS IN SINGAPORE WITH DEEP-FRIED PIZZAS & ‘1000’-LAYER LASAGNA!

There’s been plenty of famous pizzerias opening in Singapore lately, such as the world’s “oldest pizzeria”, as seen in the iconic ‘Eat, Pray, Love’ movie; but if you still can’t get enough of pizzas, here’s another joint to add to your roster.

Located in Tanjong Pagar is Fortuna, a popular Italian trattoria and pizzeria hailing from Sydney, and also dubbed as Singapore’s first Sicilian-Neapolitan restaurant. The space is homey and welcoming, with warm brick hues, rustic patterned floors and an open kitchen-bar concept where you can see pizzas being tossed into the wood-fire Neapolitan oven.

The star of the show at Fortuna is undoubtedly their pizza, made with dough that’s been fermented for over 50 hours. This extra long fermentation process is what gives their pizzas the signature puffiness and also makes it easier to digest—so you don’t feel bloated after your pizza meal!

After sampling their pizzas, we can attest that Fortuna’s pizzas are indeed one of the fluffiest we’ve ever had, with a light, slightly chewy texture. The ultra bubbly, blistered crust of each slice makes for one of the most stunning pizza cross sections. While it’s best to dig into the pizzas while they’re piping hot and fresh from the oven, they still manage to taste amazing even when cooled down, which is not something we can say for other pizzas.

Pane di Casa, $12; Salame Napoli, $12

Gambero & Stracciata, $38

There are 3 different types of pizza on the menu, but our top pick has definitely got to be the Fried & Baked Gambero & Stracciata ($38) pizza. The pizza is twice cooked: first deep-fried in oil, then baked in the oven, and the result is a crust that’s super crispy and light, yet not greasy in the slightest.

Truffle & Anchovies, $42

Piselli & Cotto, $29

The Truffle & Anchovies ($42) Pizza al Ruoto is triple fermented, with a crust that’s thicker and denser than usual, almost like a loaf of focaccia bread. Even though this pizza is more “doughy” than the deep-fried ones, it still maintains its lightness and fluffiness, crisp on the outside and soft on the inside. The Impasto Classico options like Piselli & Cotto ($29) are also worth trying, with classic pizza toppings like Marinara ($22), Diavola ($25), Margherita ($23) and more.

‘1000’ Layers Lasagna, $36

Pasta lovers are also in for a treat at Fortuna, with unique pasta options like the ‘1000’ Layers Lasagna ($36). Despite its novel name, the lasagna doesn’t actually contain 1000 layers: the idea comes from the story of how family members would fight over the coveted “corner piece” from a tray of lasagna, because of its extra crispy crust. This is why each slice of Fortuna’s ‘1000’ Layers Lasagna is individually pan-fried before serving, so everyone gets to enjoy the same crispiness you’ll get from a “corner piece” of lasagna! Instead of the usual tomato base, Fortuna’s lasagna is made with a pistachio pesto sauce for a more nutty and earthy flavour.

Mafalde Pasta, $34

Burrata, $26

Other highlights from the menu include the Mafalde ($34) that’s made with a 24-hour slow cooked beef ragout and finished tableside with a topping of torched provolone cheese. Their Burrata ($26) is also pretty unique, doused with a homemade crispy chilli oil for a taste that’s almost familiar, with a spice that’s nicely balanced by the cool creaminess of the burrata itself.

Fortunamisu, $18

Espresso Martini, $22

To end, you can get the classic Fortunamisu ($18), or try the Cannolo Siculo ($15), a classic Sicilian dessert made with a roll of deep-fried pastry and filled with ricotta cheese and pistachio. They also offer signature cocktail concoctions like Back in Town ($25), Amo 4 Ever ($25) and Espresso Martini ($22), among others.

After our visit, we can safely say that Fortuna truly embodies that homey Italian hospitality; the vibes are welcoming, and the chefs are playful and cheeky—ever ready to share their love for Italian food. If you’re looking for a new pizza joint to try, or an elevated Italian restaurant for date nights out, Fortuna is a good place to consider. While prices might not be the most pocket-friendly compared to some other pizza joints in Singapore, you can definitely taste the love and quality in each bite.
