Pasta…in a sandwich? Sounds pretty strange when you imagine it, but wait until you see what it actually looks like in real life—and you can find the exact item right here in Singapore for a whopping $69.
Rubato is one of the OG Italian restaurants in Singapore, garnering quite a cult following over the years, especially for their premium (and pretty pricey) pasta dishes topped with ingredients like uni, truffle, scallop sashimi and more. And the latest addition to their pasta repertoire is the Merlion Falls: a massive chonker of a pasta dish with striking visuals we haven’t seen in any other pasta dish.
The pasta component itself is pretty standard: your classic beef bolognese spaghetti, except doused with handfuls upon handfuls of cheese to make it ultra rich and stretchy. The entire pan of cheesy pasta is then poured straight over a French loaf of bread that’s been shaped like a cone (hence the name Merlion), until it’s literally overflowing.
The end result is quite the shocking visual: explosive, and really messy. There’s a couple ways to go about conquering the dish: neatly (as much as possible) with a fork or by picking the whole thing up and taking a big bite like you’re eating a sandwich. Personally, we don’t recommend the second option (unless you’d like to get sauce all over your hands and face) as the whole thing is quite the jaw-breaker to bite into.
The Merlion Falls doesn’t come cheap either: it’s usually priced at $68.80++ each, though they’re offering it at a limited-time promotional price of $28.80++ each (end date unspecified). You can get it at Rubato for a limited time only, starting from 25th July till 9th August 2024. The Merlion Falls is also good to feed up to 3 to 4 persons, so if you know of any other extreme cheese and pasta lovers, perhaps this novel dish might be one to consider trying out.
