If you’re privy to the fine dining scene, and have visited restaurants like Willow, Zén and Le Matin Patisserie, you might already be familiar with pastry chef Hui Shan—known for her beautiful and delicious desserts that have become a fan-favourite among diners.
Since leaving her stint as head pastry chef at Willow, Chef Hui Shan has finally achieved her dream of opening her very own space with Catkin by Hui Shan: a refined dessert parlour where Hui Shan’s IG-worthy desserts get to shine on their own.
If you’ve yet to try Hui Shan’s creations, go for the full Catkin experience with her signature 3-course omakase-style menu that’ll change periodically, so you’ll get to try some of the best Hui Shan has to offer at the moment. The Tasting Menu ($48++/pax) also comes with 2 tea pairings: Rooibos, Chamomile and Honeybush to pair with the first 2 desserts, and White Elderflower as a palate cleanser after the final dessert.

Hui Shan is known for her nostalgic dessert creations that are inspired by childhood treats or a long-lost local flavour, elements that you’ll see in Catkin’s tasting menu. Currently, the menu consists of Muah Chee ($16), Kueh Tutu ($14) and Sour Plum Guava ($16), each of which are also available as a la carte. Each dessert is plated artfully and beautifully, looking almost too pretty to eat, so you’ll definitely want to whip out your camera to snap some pictures before digging in. Be quick though: as each dessert contains gelato/sorbet and will melt if you take too long!
Catkin shares a space with Twenty Eight Café, occupying a large oval-shaped table in the centre surrounded by stools and bar seating so you get to watch Hui Shan in action up close. If you’re dying to try the Catkin experience for yourself, drop them a DM on Instagram to secure your seat!
