Order the brand’s highly anticipated Sushi Cones, rolls of housemade butter sushi rice generously stuffed with any one of the following luxurious flavours – Ikura Temaki (S$8), Negitoro Temaki (S$8) or decadent Uni Temaki, air flown from Hokkaido (S$18) – or the restaurant’s innovative Maki Rolls, featuring novel flavours like Salted Egg Roll (S$16.80), a salmon sashimi and avocado roll, drizzled generously with house-invented salted egg yolk sauce and tobiko, and Avocado Ebi Roll (S$16.80) lined with slices of avocado, layered with signature housemade sweet chili mayo sauce and topped with tobiko.
On days when familiarity is what you crave, there’s nothing quite as comforting as a bowl of ramen. Tsuta’s latest menu retains its current extensive range of flavours, catering to every palate. Classics that continue to enchant include the Premium Char Siu Shoyu Soba (S$18.80 regular; S$12.80 light) made with premium kurobuto pork loin and iberico pork belly, enhanced with balsamic truffle sauce, spring onion, bamboo shoot and fig compote, and the Teriyaki Chicken Paitan Soba (S$12.80 regular, $8.80 light) serving up two slices of teriyaki chicken, baby leaves, sweet corn, mushrooms and yellow onions.
Other more adventurous offerings include the Mala Tonkotsu Soba (S$13.80 regular, $9.80 light) which will leave you perspiring with char siu, spring onion, leek, mala minced pork and crushed peanuts cooked to simmering spicy perfection in a broth of sichuan pepper, goji berries and black fungus mushrooms.
Lastly, all ramen-enthusiasts must try the Crab Soba with Premium Char Siu & Crab Shell ($23.80). Plenteously filled with Japanese snow crab meat that has been lightly seasoned and flame torched, this dish combines Tsuta’s meaty Iberico pork belly and Kurobuta pork loin to present a savoury and well-balanced broth which has been boiled with fresh mud crabs over a few hours in two ways. Most notably, this dish showcases a taste of pure oceanic delight in a multi-layered umami-filled broth.
